1 APPETIZER: mini calzones
2 MAIN COURSE: irresistible pizza
3 FISH AND SIDE DISH: salt crusted fish
with baked potatoes
4 DESSERT: Nutella pizza
Now, fire up your wood-burning oven.
It will be the star of your perfect dinner party. First of all, prepare your appetizer. When the pizza dough is ready, separate it into two parts, one for
your calzones and the
other for pizzas and/or
focaccias.
To make mini calzones:
on a lightly floured work
surface, roll out the
dough into rectangles
which are 3 mm thick. Put the filling at the centre of these rectangles and fold over. With a pastry wheel or a glass/cup, cut calzones into half-moons. Fold them over and press with a fork to seal them.
Lightly brush calzones with olive oil and bake them in the wood-fired oven at 210°C - 230°C for 25-30 minutes.
The main course will be the irresistible
pizza, garnished as you like and served in slices so that your guests will enjoy the different varieties and enhance the scenic effect of your dinner party evening. Remember to gently
hand-stretch the pizza dough to make a classic and yummy Margherita, a pizza bianca with olive oil and rosemary or the iconic pizza Napoletana.
Salt-crusted fish: choose the kind of
fish you prefer and the right amount according to the number of guests. Salmon, sea bass or gilt-head bream are great picks for this tasty recipe but any kind of fish will fit the bill.
Place a layer of sea salt in the bottom of a roasting pan and stuff the body cavity with Pachino tomatoes, parsley, garlic, olive oil and salt. Cover the fish completely with the remaining sea salt and sprinkle some water on top of the salt to help it form the crust. Bake at 200°C for 40-50 minutes.
Now, to top it all off, a delicious Nutella pizza!
