If it has been kept in the refrigerator, take it out and leave it at room temperature a few hours before cooking. Another trick for a perfect BBQ? Marinade! Have it as you please, but a good marinade should be oily, spicy and slightly acidic. So, put in vinegar, lemon juice, wine, oil, aromatic herbs or spices and marinate for a few hours.
When to light our barbecue? 30 minutes before grilling. Our wood-burning barbecue will give the meat its seductive scent and irresistible crispy texture. Don’t use softwoods (pine, fir or larch) for the fire, but favour instead hardwoods (olive, oak or ash) that are low in resin and high in flavour. Just like the king has his crown, robe and sceptre, every BBQ aficionado has his grilling accessories: meat forks, tongs and apron that will make all the difference.
Let’s see how to cook meat now; cooking times depend on the type and size of the meat cut: hot and fast for smaller cuts and low and slow for larger ones. Choose cuts of meat of the same size to ensure an even cooking. Salt the meat only after cooking, never before or during, to prevent salt from drawing out juices and drying out the meat cut. After cooking, put the meat on a plate and let it sit for a few minutes before serving it; the meat will be flavourful and you won’t burn your tongue!
